Pan roof - aesthetically and exterior-wise, it blends in well with the darker colours; obviously the whites/lighter colours provide a contrast. From an interior perspective, in all cars it sheds a lot more light into the cabin, especially where the ebony leather is fitted.
Engine-wise, you’ve “lost” 40 horses. And, the earlier V6 engines will have a more emotive exhaust note, which is a degree stifled on the GPF cars.
Beyond that, it’s personal choice on equipment levels which suit you.
Introducing
Aim for a V6 2018 model year as it's the last unmolested engine without a particle filter. The V6 will hold the value a lot better than a 2L. Check out the discussion started last night about pano roof.

Another advantage of the pan roof is you don't have to worry about sagging roof linings a few years down the road! And if you don't like all that lightness, you can close the shade.
Best to drive as many as you can, and see which you prefer. And, as you've found, you have to move fast as the good ones sell quickly!

There’s far more qualified members on this great forum to answer your questions than me but I’ll share my opinion and short experience with you:
First of all if it’s got an F type badge on it it’s an incredible car, the rest is down to personal preference and let’s be honest budget for the purchase.
My first V6 (more detail on signature) was a RWD without a pano roof. It was incredible, at last my dream had come true!
A real drivers car I felt which was a lot of fun, a bit of a hooligan I suppose when you really asked her

With no pano roof yes the cabin did feel compact but you don’t miss what you’ve never had, I loved it!
Got the upgrade itch as many on here have had and purchased the V8 in May this year.
Re RWD vs AWD this I think is the biggest variance when comparing the two cars I’ve had. The drive is safer IMO even with the undoubtably more power the engine has. For me as it’s my daily drive this was a huge improvement.
I do have a pano roof now and I love it! The dark glass works well as a contrast to the lighter body on the outside and inside when the sun is out the cabin fills with light.

Really interested about the point on RWD Vs AWD. Do you feel that difference day to day or was it more when you pushed it and asked more of the car?

OP, do some search here on what to look for on a used F-type. Check out some of the invaluable advice that I got from SCM, SimpleR, MajorTom and others when I was on the market for an F-type. You'll see that I went from "I've been thinking" to "I bought it!" in about a week

Not on the F-Type as far as I know, but old Jags (and other makes) do suffer such things over time. The latest Iain Tyrrell video deals with one in an F40 - as Craig said "no glue can beat gravity over time".

Pre-load torque - The TCCM applies this torque to the transfer case coupling to assist in a smooth and safe drive off from stationary
Feedforward - governed by the transmission output torque, requested flywheel torque and gear selection
Feedback - governed by the difference in speed between the wheels on the front and rear axles to determine wheel slip. Compensation is made when cornering and also the radius of the wheels
Torque distribution between front and rear wheels can be between 100% RWD or full AWD, although the system is continuously variable dependent on signal inputs and road surface conditions”
I shouldn’t worry too much about getting hung up on the RWD/AWD unless you’re doing regular track days to exploit the car at its limits. The transfer box adds around 81kg to the car but provides a more stable car in adverse conditions allowing you to make progress safely, and given the weather in the UK then I’d rather have that. The only time I notice the AWD is when I deliberately put it in wet/snow mode for the extra traction, otherwise it just loiters in the background
